How do I ask guests for a 5-star review?

Ask a couple of hours after checkout, while the stay is still fresh and before they've moved on to real life. Asking mid-stay feels like pressure; asking a week later gets forgotten. That short window right after they leave is the whole game.

Keep the ask light and human:

Hi {name}! Thank you so much for staying at {property} — I hope you had a wonderful time!

If you have a moment, I'd really appreciate a review. Your feedback helps other travelers find our place and helps me keep improving.

Thanks again, and I hope to host you again someday!

A few things stack the odds. Leave your review of them first, since a lot of guests reciprocate out of reflex. Plant the seed earlier, too: a mid-stay "everything good so far? I want to make sure you've got a five-star stay" both surfaces problems while you can still fix them and quietly frames what a good review looks like. And if they mentioned loving something specific, name it back ("glad the roof terrace worked out, mention it if you write anything, future guests always ask about it").

The lines not to cross: don't dangle a discount or gift for a review, that's against Airbnb's terms and can get you delisted. Don't literally ask for five stars, ask for honest feedback. Don't nag with reminders. And don't chase a review from a guest whose stay went sideways; you're inviting the one-star in writing.
